Delicious Discoveries - Pumpkin Mousse Trifle



The last weekend of the Epcot International Food & Wine Festival is rapidly approaching us, and so we’re going to run with one more fan favorite recipe from the past couple of years of the festival. This week’s recipe is also perfect for those who are looking for ways to have a traditional Thanksgiving, but add a twist to those time-tested, traditional dishes. Today, we’re putting together the Pumpkin Mousse Trifle.


PUMPKIN MOUSE TRIFLE

Streusel Ingredients

1/3 Cup plus 2 Tbsp. Old-Fashioned Oats
1/4 Cup plus 2 Tbsp. Flour
1/4 Cup Brown Sugar
1/4 Cup Sugar
5 Tbsp. Butter (melted)


Streusel Directions

Preheat oven to 325°F.
Line a sheet pan with foil, set aside.
Combine oats, flour, brown sugar, and sugar in a medium bowl. Add melted butter and stir until mixture is crumbly.
Pour onto prepared sheet pan.
Bake for 15 – 20 minutes, or until golden brown.
Set aside to cool.
Crumble into small pieces.


Apricot-Orange Sauce Ingredients

½ Cup Apricot Jam
½ Cup Orange Juice


Apricot-Orange Sauce Ingredients

Combine apricot jam and orange juice in a medium bowl.
Whisk until smooth.


Pumpkin Mouse Ingredients

1 Egg Yolk
1 Cup Heavy Cream
¾ Cup Canned Pumpkin Pie Filling
¾ Cup White Chocolate Chips


Pumpkin Mousse Directions

Whisk egg yolk into pumpkin pie filling.
Melt white chocolate chips in a microwave or using double boiler.
Whisk melted white chocolate into pumpkin mixture.
Whip heavy cream to medium peaks.
Gently fold whipped cream into pumpkin mixture.


Other Ingredients

1 Package Spice Cake Mix (prepared per package directions and cool)
½ Cup Dried Craisins


Serving Directions

Cut sponge cake into cubes.
Place a dollop of mouse at the bottom of a serving dish.
Top with Crainsins and drizzle with sauce.
Place a few cubes of spice cakes over mousse.
Top with another layer of mousse, Craisins, and sauce.
Finish with streusel.


Now, you may recognize I have no pictures to go along with this recipe today. That’s because I am planning on whipping up a batch (which serves 6 to 8) of the Pumpkin Mousse Trifle for Thanksgiving. I will update this article with step-by-step photos and my own tasting notes later this month.

The Pumpkin Mousse Trifle has regularly been rated as one of the favorites of guests at the Epcot International Food & Wine Festival, both in terms of value ($1.50 per order) and taste! Even though the festival is preparing to close up the kitchens in the next few days, that doesn’t mean the party can’t continue in your own home.
